Strawberry Pineapple Salad Recipe
Strawberry Pineapple Salad 6 c. chopped romaine lettuce 3 c. sliced fresh strawberries 2 c. cubed fresh pineapple 1 banana, sliced 1/4 c. water 1/4 c. cream of coconut 2 Tbsp. lemon juice 1 Tbsp. yellow mustard 1/2 tsp. ground ginger 1/4 c. sliced almonds, toasted (optional) *Note* Look for cream of coconut with drink mixers in your supermarket. In a large bowl toss together romaine lettuce, strawberries, pineapple and banana. Seal bowl and refrigerate for 1 hour. For dressing: In a small bowl whisk together water, cream of coconut, lemon juice, mustard and ginger. Cover and refrigerate the dressing. To Serve: Toss greens and fruit salad mixture with dressing to coat. Sprinkle with toasted almond slivers if desired.
